Ingredients
3 Medium Sized Onions
900 Gram Chicken
2 Cup Rice
2 Cup Vegetable Oil
1 Cup Yogurt
2 Tablespoons of Ginger Garlic Paste
1 Cup of Fried Onions (Barista)
- Spices:
1 and Half Tablespoons of Red Chili Powder.
1 Tablespoon Kashmiri Chili Powder or Paprika Powder as an alternate.
1 Tablespoon of Coriander Powder.
1 Teaspoon of Turmeric Powder.
1 Teaspoon of Cumin Powder.
1 Teaspoon of Salt or add to taste.
Process of Making
Step 1- Fried Onions (Making Barista)
- In this step put 2 Cup Vegetable Oil into the pot and set it on Low Medium Heat.
- Add Raw Onions into the oil and fry it until it gets a Golden Brown Color.
- Always remember while frying onions keep wheeling onions to prevent burning of the onions.
- Once onions are fried set them aside and let them dry for a while.
- Step 2- Marinating Chicken:
- Add 1 Cup of Yogurt to the Chicken
- Add 1 and Half Tablespoons of Red Chili Powder
- Add 1 Tablespoon Kashmiri Chili Powder or Paprika Powder as an alternate
- Add 1 Tablespoon of Coriander Powder
- Add 1 Teaspoon of Turmeric Powder
- Add 1 Teaspoon of Cumin Powder
- Add 1 Teaspoon of Salt or add to taste
- Add 2 Tablespoons of Ginger Garlic Paste
- Add 1 Cup of Fried Onions (Barista)
- Once you add all the ingredients mix the chicken until it mixes well with the species.
- After mixing the Chicken set it aside for 30 minutes and let it marinate.
- Step 3- Making Rice:
- Add 2 Cups of Rice to the bowl
- Add 2 Cups of Luke’s Warm water
- After adding warm water let it soak for at least 15 Minutes.
- Step 4- Making Gravy:
- After marinating the chicken add 1 Cup of Vegetable oil.
- After adding oil add marinated Chicken into the pan and mix it for 3 minutes.
- After 3 minutes cover it for 15 minutes on Medium heat.
- Once the chicken is ready set it aside for a while.
- Step 5 – Boiling Rice:
- Fill half of the pot with water and let it boil on a High flame
- Add 2 Teaspoons of Salt
- Add 2 Teaspoons of Black peppers and Cloves
- Add 3 Bay Leaves
- Add 2 Cinnamon Sticks
- 2 Star Anise
- 1 Big Cardamom
- 1 Teaspoon Cumin Seeds
- 1 Tablespoon of Lemon Juice
- 1 Tablespoon of Vegetable oil.
- 3 whole Green Chilis
- Once all the ingredients are added boil the rice on high flame for 10 minutes.
- Once the rice is half cooked drain them and set them aside for a while.
- Step 6 – Making Layers and Cooking Rice with Gravy:
- In this final step put the Chicken pot onto the stove and add half of the boiled rice to the Chicken.
- Spread them and make a layer of rice.
- Once the layer is made sprinkle Fresh Coriander or Parsley along with Fresh mint.
- After sprinkling Coriander and mint make a final layer of rice.
- spread remaining rice.
- After making the final rice layer again spread some Fresh Coriander and mint then sprinkle the remaining fried onions (Barista) and yellow food color.
- After making layers cover it on low heat for 10 minutes.
- After 10 Minutes remove the cover turn off the flame and your ” Chicken Dum Biryani is Ready to Serve.
